附帶一提,「布丁」這個字其實是某一種絞肉製品(如約郡布丁、黑布丁,以及塞在動物內臟(如胃)的絞肉等等),源自於古法與「血腸」。到了後來「布丁」才比較廣泛用在甜點的布丁上。

根據美國《韋氏辭典》記載,其實有三種東西都可以叫做布丁(Pudding ):

1. 材料含有穀物,用蒸或烤製成的軟食物。 A boiled or baked soft food usually with a cereal base.

2. 柔軟、像海綿般或是有濃稠奶油的甜點。A dessert of a soft, spongy, or thick creamy consistency.

3. 含有牛羊脂肪,包裹在袋中蒸煮的料理。A dish often containing suet or having a suet crust and originally boiled in a bag.

而英國的《牛津食物百科》(Oxford Companion to Food)則很有趣的在布丁段落加上了特別說明:「布丁(Pudding)在美國,幾乎專指用玉米粉和牛奶做出來的甜點。」

我記得布丁定義應該是《韋氏辭典》那三個的3 → 1 → 2 這樣的演變,而我們現在所認知的「布丁」,全名叫做「奶黃布丁」((原料為)卡士達(做的)布丁)。

只要交叉比對一下就能輕易發現,只有第 2 個定義才符合我們認知中的布丁,而這類甜點在歐洲比起 Pudding,更常使用卡士達 Custard、布蕾 Crème 這兩個詞來描述,畢竟 Pudding 代表了含有穀物或牛羊脂肪的蒸煮料理.....

這也是為什麼我們聽到英國血布丁、黑布丁會覺得很奇怪的原因──因為布丁是藉由美國傳到日本,再由日本人帶到台灣的,因此我們理所當然的繼承了日本 & 美國人對「布丁」的認知,而在近代歐洲文化傳入的同時,我們才又撈回了「布蕾」這個稱呼,並衍生出:「沒有燒烤過的雞蛋甜點 = 布丁,有經過燒烤程序、較為濃稠的甜點 = 烤布蕾」這種想法。
